Asparagus and goat cheese quiche
This light, flavorful quiche is a perfect centerpiece for any brunch table.
Ingredients
- 1 premade pie crust (or homemade if you prefer
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 1/2 cup crumbled goat cheese
- 6 large eggs
- 1 cup heavy cream or milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg (optional)
- 1/4 cup chopped fresh herbs (parsley, chives or dill)
Instructions
- Preheat oven to 375°F. Blind bake the pie crust for 10 minutes until lightly golden.
- Blanch asparagus in boiling water for 1 minute, and then transfer to ice water to preserve color.
- In a bowl, whisk together eggs, cream, salt, pepper and nutmeg.
- Layer asparagus and goat cheese in the crust. Pour egg mixture over the top.
- Bake for 30-35 minutes, until the center is set and slightly golden.
- Let cool for 10 minutes before slicing. Garnish with fresh herbs and serve.
